These delicious cookies are a great way to make use of leftover cranberry and orange sauce over the holidays.

  • 2/3 cup cranberry orange relish
  • 3/4 cup packed light brown sugar
  • 1 cup unsalted butter
  • 2 1/2 cups flour
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon ground allspice
  • 3/4 teaspoon ground cinnamon
  • Pinch of salt
  • 3/4 cup pecan pieces, chopped

1. Preheat the oven to 350 degrees and lightly grease a cookie sheet.
2. Add the cranberry orange relish to the food processor and process until very smooth. Check the taste, and add some more sugar if required.
3. Using a mixer, beat the sugar and butter until creamy, then add the vanilla extract. Continue to mix until the vanilla is just blended in.
4. Leave the mixer to run slowly, and add the flour, then the spices and lastly the salt, mixing until all ingredients are blended. While doing this, scrape down the sides of the bowl.
5. Remove the mixing bowl and stir in the pecans by hand.
6. Form this cookie dough into balls of about 1 – 2 inches, and place about an inch apart on a greased cookie sheet.
7. Using your thumb, gently press a crater into the center of each cookie.
8. Carefully fill the crater with about 1/2 – 3/4 teaspoon of the blended cranberry orange relish.
9. Bake the cookies for about 12 – 15 minutes or until they turn a light golden brown.
10. Remove from the oven and allow to cool on the cookie sheet.
