These tasty muffins are a great holiday recipe, and equally appealing at any other time of the year too.
Ingredients
- 1/2 teaspoon baking soda
- 2 teaspoons baking powder
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 2 tablespoons light brown sugar
- 2 tablespoons butter, melted
- 1 cup quick cooking oats
- 1 egg, beaten
- 3/4 cup cranberry orange relish
- 1/3 cup evaporated milk
Directions
1. Preheat the oven to 425 degrees. Prepare the muffin tin with paper cups or grease and flour.
2. Add the salt, baking powder, baking soda and flour to a large mixing bowl, stirring or sifting the ingredients together.
3. Add the oatmeal and the brown sugar, stirring until all ingredients are well combined.
4. Add the rest of the ingredients to the bowl. Stir until the the dry ingredients are just becoming moist.
5. Add the mixture to the muffin cups (these should be about 2/3 full).
6. Bake at 425 degrees for 12-15 minutes, or until the muffins are golden brown on top.
7. Remove from the oven and allow to cool a little, then remove to a cooling rack for complete cooling.
For a healthier recipe, try substituting xylitol for the sugar, and coconut oil for the butter.
