Here’s a tasty salad recipe that is a good choice if you have leftover cranberry sauce this holiday season.
Ingredients
- 1 cup cranberry sauce
- 1 small sweet orange, zested and squeezed
- 1 tsp Dijon mustard
- 2 Tbsp balsamic vinegar
- 1/4 cup olive oil
- 1/2 tsp honey or agave nectar
- 1/8 tsp salt
- Chopped walnuts
- Spinach
- Quorn pieces or other vegetarian meat substitute
Directions
1. Take a large mixing bowl and add the cranberry sauce, orange juice, orange zest, mustard, vinegar, salt and honey. Stir well until all ingredients are mixed.
2. Slowly drizzle in the olive oil while whisking constantly. Add a little oil at a time, until the vinaigrette thickens and becomes smooth.
3. Arrange the spinach and Quorn pieces on salad plates. Top with the vinaigrette.
4. Sprinkle the walnuts on top of the salad and serve cold.
Leftover cranberry orange relish could also be used in place of the sauce – if you use this, you won’t need the orange in the recipe.
