Do you have sweet potato casserole leftovers that need using up? This recipe will put them to good use.
Ingredients
- 4 cups leftover sweet potato casserole
- 1 pkg (8 oz) cream cheese, at room temperature
- 2 cups cranberry orange relish
- 1/4 tsp cinnamon
- 1/4 cup brown sugar
- 1/2 cup chopped walnuts
- 1 cup chopped tart apples
- 3 Tbsp flour
- 3 cups oat or cornflake cereal
- 3 Tbsp butter
- 2 Tbsp brown sugar
Directions
1. Preheat the oven to 350 degrees. Grease a shallow casserole dish.
2. Add the leftover sweet potatoes to a bowl with the cream cheese. Using an electric mixer (or blender), mix until they’re smooth.
3. Add the cinnamon and the 1/4 cup of brown sugar, and mix again until smooth. Note that you might want to omit the sugar if the casserole is already very sweet.
4. Layer the sweet potato mixture into the casserole dish, distributing evenly.
5. Sprinkle the apple pieces evenly over the top.
6. Add the cranberry orange relish, spooning it on evenly.
7. Sprinkle on the walnuts.
8. Add the flour, butter and remaining brown sugar to a bowl, and cut with a fork or pastry cutter until the mixture is crumbly.
9. Add the cereal flakes and toss until the ingredients are properly combined.
10. Sprinkle this mixture evenly over the casserole.
11. Bake uncovered, in a preheated oven for 30 to 40 minutes, or until the casserole is hot and bubbly and the crunchy topping is a light brown.
