Recipe: Sweet Potato Cake

Here’s a filling autumn recipe that is perfect for anyone with a sweet tooth.

Ingredients

  • 1 3/4 cups white sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup melted coconut oil (or vegetable oil)
  • 3 eggs
  • 2 cups all-purpose flour
  • 2 cups sweet potatoes, mashed
  • 1/4 teaspoon salt
  • 2 teaspoons baking soda
  • 3 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 cup beer (optional – substitute juice or water if you prefer)

Directions

1. Preheat the oven to 350 degrees and coat a 9×13 inch baking dish with grease and flour.
2. Add the sugar and coconut oil to a large mixing bowl, and mix together until smooth.
3. Add the eggs to the bowl, one at a time. Beat each egg as it is added.
4. Add the vanilla to the bowl, stirring thoroughly.
5. Add the mashed sweet potatoes to the other ingredients in the bowl, and blend well.
6. In a separate bowl, mix together the flour, salt, cinnamon, baking powder and baking soda.
7. Add small amounts of this dry mixture to the sweet potato mixture, alternating with small amounts of the beer. Avoid overmixing.
8. Place the resulting batter into the prepared baking dish.
9. Bake in a preheated oven for 35 – 40 minutes, or until a toothpick inserted in the middle comes out clean.
10. Remove and allow to cool. Slice and serve.
