Recipe: Summer Cucumber Boat Salad

This refreshing cucumber salad recipe is low in carbs and great for hot summer days.

Ingredients

3 large cucumbers
2 hard boiled eggs, chopped
1/2 c celery, chopped fine
1 tbsp sweet onion, chopped fine
1/4 c mayonnaise
2 tbsp relish
1 tsp lemon juice
1/4 tsp pepper
1/2 c Cheddar cheese, grated

Directions

1. Cut the cucumber in half along its length.
2. Remove the seeds from the cucumber halves, and trim a section from the bottom of each piece, so the cucumbers sit flat on the plate without wobbling.
3. Add the celery, eggs and onion to a mixing bowl, and stir together.
4. Add the relish and mayonnaise to the mixture, and stir until the mayonnaise is smooth.
5. Add the lemon juice, and sprinkle in the pepper, stirring well.
6. After mixing, sprinkle in the cheese and continue to stir until the ingredients are thoroughly mixed.
7. Add the salad mixture to the cucumer halves, and serve.

Any other type of salad mix will also work well with cucumber boats. This recipe can easily be adapted for vegans by using egg-free mayonnaise, leaving out the boiled egg, and substituting vegan cheese for the Cheddar.
