Here’s a delicious, simple and healthy rice meal that is also suitable for vegans.
Ingredients
- 2 T olive oil
- 4 large shallots, finely chopped
- 12 fresh shiitake mushrooms, stemmed and thinly sliced
- 1 t lemon zest
- 1 T fresh dill, minced
- 2 T fresh parsley, minced
- 1/2 t salt
- 1/8 t pepper
- 1/2 C water
- 1 lb asparagus, trimmed and cut into 1 in pieces
- 1 1/2 C wild rice, steamed
- 1 1/2 C cooked brown rice
Directions
1. Add the olive oil to a large skillet, and place over medium high heat.
2. After the oil has heated up, add the shallots and cook for 1 minute while stirring constantly.
3. Add the mushrooms to the skillet and cook for 5 minutes, stirring often.
4. Stir the parsley, lemon zest, dill, salt and pepper into the mixture.
5. Add the water.
6. Add the asparagus to the skillet.
7. Cook the ingredients for 5 minutes, stirring frequently.
8. Cover the skillet and cook until the asparagus is bright green.
9. Add the steamed wild rice and stir thoroughly.
10. Add the cooked brown rice.
11. Cook until the rice begins to turn slightly crusty on the bottom.
12. Stir well and serve.
