Recipe: Grilled Summer Vegetable Sub Sandwich

Here’s a quick and easy sub recipe with delicious seasonal vegetables.

Ingredients

  • 1/4 C mayonnaise

  • 1/8 C olive oil
  • 1 T lemon juice
  • 3 garlic cloves, minced
  • 1 zucchini, sliced
  • 1 sweet red onion, sliced
  • 1 C red bell peppers, sliced
  • 1 yellow squash, sliced
  • 1 loaf Italian bread, sliced vertically and then horizontally

Directions

1. Place lemon juice, garlic and mayonnaise in a mixing bowl, and mix together.
2. Cover the bowl and place in the fridge until ready for use.
3. Brush the grill rack with olive oil and heat to high.
4. Brush both sides of the vegetable slices with olive oil.
5. Place the zucchini slices in the centre of the grill.
6. Arrange the peppers around the zucchini.
7. Put the squash around the peppers.
8. Add the onions outside the other vegetables.
9. Grill the veg for 4 minutes.
10. Turn the veg slices over and continue to grill for another 4 minutes (or until they’re as tender as you prefer).
11. Spread each bread piece with the mayonnaise mixture.
12. Place the bread on the grill, with the mayonnaise-coated sides facing upwards.
13. Close the lid and grill for 2 minutes.
14. Make the sub by placing the grilled vegetables between the bread pieces.
