This simple tortellini recipe is a great main course and very tasty.
Ingredients
- 1 large garlic clove, minced
- 2 T red wine vinegar
- 1/3 C olive oil
- 1/2 t salt
- 1 red bell pepper, cut into strips
- 5 C tiny broccoli florets
- 1/4 C pine nuts
- 1 lb frozen cheese tortellini
Directions
1. Fill a large saucepan half way with water, and place over medium high heat.
2. Bring to a quick boil.
3. Add the broccoli to the water and cook for around 3 minutes. The brocolli should be tender but still have some bite.
4. Add the red peppers and boil for 15 seconds.
5. Place the brocolli and peppers in a bowl of cold water. The water will warm up – when this happens, drain and replace it with more cold water.
6. After the second bowl of water warms to room temperature, drain the vegetables and pat them dry with kitchen towel.
7. Cook the tortellini as instructed on the pack.
8. Drain the tortellini and place in a large mixing bowl.
9. Add the pine nuts to a small skillet, and toast for about 5 minutes over medium heat. Stir often and be careful of them burning, which can happen quickly.
10. Add the roasted pine nuts to the tortellini.
11. Add the peppers and broccoli to the tortellini.
12. Add the red wine vinegar to a shaker container, and add in the olive oil, salt and minced garlic.
13. Shake the mixture thoroughly to combine the ingredients.
14. Pour the dressing onto the tortellini-vegetable mixture.
15. Cover the dish and allow to set for 30 minutes before serving.
