Here’s an easy to make recipe for frozen cucumber pickles.
Ingredients
- 6 cucumbers, thinly sliced
- 1 large red onion, thinly sliced
- 2 T salt
- 1 C white vinegar
- 3/4 C sugar
- Freezer containers
Directions
1. Add the onions and cucumbers to a large mixing bowl.
2. Add the salt and fold the ingredients together.
3. Allow to stand for 2 hours at room temperature.
4. Rinse the onion and cucumber in cold water.
5. Place in the freezer containers.
6. Mix together the sugar and vinegar until the sugar is completely dissolved.
7. Pour the vinegar mixture over the cucumbers and onions.
8. Freeze for at least 3 weeks before eating.
9. When you’re ready to eat the pickles, allow them to thaw overnight in the fridge.
